After the above time, remove the dishes with the whipped whites from the water bath, add the crushed cinnamon and fine coconut chips, and beat the protein mixture for a few more minutes.
Prepare the largest baking sheet with low walls, cover it with baking paper, then spread the protein mass in equal portions using a tablespoon.
Place a baking tray with coconut custard meringues in the oven, heated to 140 degrees, and bake the airy treat for about forty minutes.
